Where cold press and torchon papers are chosen for their texture, hot press is chosen despite having almost none. The smooth surface lets a fine brush or a technical pen glide without catching on paper fibres, which is why illustrators doing botanical studies, portraits or detailed line-and-wash work tend to reach for it. Washes dry with sharper edges here than on toothier paper, so glazing and controlled blending read more cleanly.

Because there is so little tooth to hide behind, this surface also shows fingerprints and skin oils more readily than a textured sheet, so it helps to rest a spare piece of paper under your drawing hand during longer sessions. That same flatness works in your favour once a piece is finished, since smooth paper scans and photographs evenly without the shadowing that a heavier grain can create.
